Everything Bagel - Seasoned Hummus

This hummus recipe is so easy that you will never buy hummus from the store again. It comes together in a flash, quicker than you can say “Everything Bagel Seasoning,” which is the ingredient that takes it to another level. Using the chickpea liquid from the can lends to the velvety, silky texture of this hummus.

Ingredients

  • One 15-ounce (430-g) can low-sodium chickpeas
  • 1/4 cup (60 g) tahini, stirred well
  • 3 tablespoons Everything Bagel Seasoning (opposite)
  • 1/4 teaspoon grated lemon zest
  • 2 tablespoons fresh lemon juice (about 1 small lemon)
  • 2 cloves garlic
  • 1/4 cup (60 ml) extra-virgin olive oil, plus more for drizzling
  • Ground sumac, for garnish (optional)

Instructions

  1. Drain the chickpeas, reserving 1/4 cup (60 ml) of the liquid. Transfer the chickpeas to a blender or food processor. Add the tahini, 2 tablespoons of the bagel seasoning, the lemon zest and juice, and garlic.
  2. Puree the mixture on low speed, drizzling in the 1/4 cup (60 ml) olive oil and the reserved chickpea liquid until smooth.
  3. Serve in a bowl, drizzled with olive oil and sprinkled with the remaining 1 tablespoon bagel seasoning and the sumac, if using. Serve immediately, or refrigerate in an airtight container for up to 4 days.
  4. VARIATION For a plain hummus, omit the Everything Bagel Seasoning.
  5. MAKE IT BEAUTIFUL Reserve a few whole chickpeas to garnish the hummus. Add a little bowl of extra spice mix to the board for guests who want to sprinkle more over their hummus. I also like to add a few crushed pink peppercorns to the tops of the hummus and bagels for extra color
